  • Well-known among wine aficionados throughout Japan, Ethelvine is a wine shop specializing in natural wines. Operated by Ethelvine, the restaurant Dupree has been pleasing diners with its nature-oriented stance and excellent meals since opening in 2018.
  • Restaurant owner Masanobu Egami states, “We want our guests to feel the compatibility between the meals that bring out the strengths of the ingredients grown in unique local climates and the wine crafted with great passion.” Along with local foods including vegetables from Ohara and carp from Arashiyama, the fresh foods brought in from surrounding regions, such as onions from Awajishima and fish from Mie and Fukui prefectures, are served with minimal processing or seasoning.
  • Carp, which has a unique flavor, is grilled over charcoal and seasoned with soup stock made from carp scraps and pickled plums. Pairing the carp with a bitter vegetable such as chickweed or viola flowers creates a much deeper flavor. Moreover, pairing this dish with rose wine from Rhone possessing a well-balanced bitter and sour flavor strongly brings out the umami of the carp.
  • The restaurant offers both an a la carte menu of appetizers, fish and meat dishes, as well as a full-course dinner including 5–6 dishes.
